1 1/2 lb cubed steak

2 medium onions, thinly sliced

Kosher salt

Pepper

1 Tbsp paprika

1 cup flour

4 Tbsp olive oil

4 Tbsp butter

2 cups broth

1/2 cup milk

 

1. Preheat oven to 350.  Pat steaks dry.  Season generously with salt and pepper.  Heat oven-safe pan with cover over medium heat.

2.  Mix flour with 1 Tbsp pepper, 1 Tbsp kosher salt, and 1 Tbsp paprika in a shallow plate.  Dredge steaks, making sure all nooks & crannies are pressed full of flour (I like to hold the steaks in my hand and let them flop over to expose these nooks & crannies).

3.  Melt 1 Tbsp butter with 1 Tbsp oil in your pan.  Brown steaks 3 minutes per side.  Remove steaks from pan.

4. Add 2 Tbsp butter and oil to pan.  When bubbly, add 1/4 cup flour mix and stir into drippings.  Slowly add broth.  Stir in 1/2 cup milk and 1/2 tsp pepper and 1 tsp salt.  Nestle steaks into gravy.  Add onions on top.  Cover and put in oven for 1 1/2 hours.

Because of the yummy gravy this makes, these are really good with mashed potatoes.
